- 1 c Red lentils, Bob’s Mill
- 4 tbsp Olive oil
- 1 White onion, medium, chopped
- 4 clove Garlic, sliced
- 0.5 c Cilantro, chopped
- 1 Carrot, medium, sliced
- 1 Potato, medium, sliced
- 2 tbsp Tomato paste
- 1 tsp Paprika, smoked
- 1 tsp Mint, dried
- 1 tsp pepper flakes
- 1 tsp Turmeric powder
- 1 tbsp Salt
- 6 c Warm water
- 2 tbsp Lemon juice, freshly squeezed
- 2 tbsp Butter, to pour on top
- 1 tsp Paprika, to pour on top
- Lime juice, a squeeze

Preparation of Lentils and Vegetables
1. Wash red lentils and set it aside.
2. In a pot add olive oil and cook the onions until they become translucent.
3. Then add garlic, carrots, potato and cilantro.
4. Sauté for 3-4 minutes before adding in the tomato paste.
5. Mix well.
6. Then add in the washed lentils.
7. In goes all the spices and stir it well.
8. Gently pour in the water.
9. Mix, cover and let it cook on low heat for 15-20 minutes.
Blending and Final Touches
1. Once the vegetables and lentils are completely cooked, blend it to a smooth soup consistency.
2. In a frying pan, melt the butter on a slow simmer with one tsp of smoked paprika.
3. Don’t burn the paprika or the taste will become bitter.
4. Pour it over the soup before serving.
5. Sprinkle some dry mint.
6. Enjoy it with some fresh squeezed lemon juice and bread!
