Ingredients

Lentil-Bulgur Mixture
- 1 c Red lentils, washed and drained
- 1 c bulgur
- 3 c water
Spice Mixture
- 1 Onion, finely diced
- 1 tsp Cumin
- 1 tsp Paprika
- 1 tsp Red chili flakes
- 2 tbsp Tomato paste
- 0.25 tsp Salt
Add at the End
- 0.5 bunch Parsley, finely chopped
- 0.5 c Mint leaves, finely chopped
- 2 tbsp Lemon juice
- 2 tbsp Olive oil
- 0.25 tsp Pepper, or to taste
- 0.25 tsp Salt, or to taste
For Serving
- gem lettuce leaves
- Lemon wedges

Directions

Preparing the lentil-bulgur mixture
1. Cook the red lentils in three cups of water until they become soft.
2. Then, add the fine bulgur (or couscous) and allow it to absorb the remaining liquid.
3. Set this mixture aside for 10–15 minutes.
Sautéing the spices
1. While the lentils and bulgur cool, sauté the onion in a pan with salt.
2. Then, add the tomato paste, cumin, paprika, and red pepper flakes to the pan.
Combining and shaping the koftas
1. Next, combine the lentil-bulgur mixture with the spice mixture and mix well.
2. Add the olive oil, lemon juice, fresh herbs, salt, and pepper.
3. Allow the mixture to cool for a few minutes, then use your hand to shape the koftas.
Serving the koftas
1. You can serve the koftas on gem lettuce leaves and garnish with lemon slices.
