- 2 lb eye of round steak
- 3 green bell peppers
- 2 Yellow onions, medium
- 3 clove Garlic
- Kosher salt
- 3 Limes, juiced
- White rice, cooked, for serving

Preparing the meat
1. Place meat, 1 chopped bell pepper, 1 chopped onion, garlic and a large pinch of salt in a pot.
2. Fill with water and bring to a simmer.
3. Remove any scum that rises to the top and cook until the meat has cooked through and slightly softened, about 15 to 20 minutes.
4. Remove the meat and allow to cool completely.
Processing the ingredients
1. Cut the steak into large cubes and place in a food processor.
2. Pulse until the steak is finely chopped.
3. Transfer to a large mixing bowl.
4. Place the remaining chopped bell pepper in the food processor and pulse until finely chopped.
5. Repeat with the onion.
Final steps
1. Give it all a stir and season with plenty of salt and lots of lime juice.
2. Chill until ready to serve.
3. Serve with rice and plantains.
4. Enjoy!
