Bulgur Salad
- 1 c fine bulgur
- 1 tbsp red pepper paste
- 1 tbsp Tomato paste
- 1 Lemon, chopped (seeds removed)
- 2 tbsp pomegranate molasses
- 0.5 tsp Cumin
- 0.5 tsp chili
- 2 stalks spring onion
- 1 c Parsley, loosely packed, finely chopped
- 1 c Mint, loosely packed, finely chopped
- 2 tbsp Olive oil
- 0.5 tsp Salt, or to taste
- Warm water, as needed (around 3/4 cup)
For Serving
- 2 heads little gem lettuce
- 2 Tomatoes, sliced

Preparation of Bulgur
1. Add fine bulgur to a flat bowl along with lemon, pepper, and tomato paste.
2. Little by little, add warm water.
3. Knead the bulgur mixture very well until it becomes soft.
4. Remove the lemon slices.
Adding Spices and Herbs
1. Next, add your spices and the pomegranate molasses.
2. Incorporate them well.
3. Finally, add olive oil and fresh herbs.
Final Steps
1. Enjoy on lettuce leaves with tomatoes and more pomegranate molasses if desired.
