Main Ingredients
- 4 large sweet potatoes
- 1 15oz can chick peas
- 0.5 tsp Olive oil
- 0.5 tsp Cumin
- 0.5 tsp Coriander
- 0.5 tsp Paprika
- 0.5 tsp Cinnamon
- Salt, to taste
- Pepper, to taste
Sauce
- 0.25 c hummus
- 1 tsp Dill, fresh, minced
- 4 clove Garlic, minced
- Salt, to taste
- water, to reach desired consistency
Toppings
- Red onion
- Parsley

Directions

Preparation
1. Pre-heat oven to 400.
2. Add chickpeas and olive oil to a bowl, mix in the cumin, coriander, paprika, and cinnamon. Add a pinch of salt and pepper then place on a baking rack.
3. Slice potatoes and cover in olive oil and salt/pepper and roast in oven with chickpeas for about 30 minutes (until fork tender).
Making the Sauce
1. Mix the hummus, dill, garlic, salt, and pepper together to make the sauce. Add water until you reach your desired consistency.
Final Steps
1. Top the roasted sweet potatoes with chickpeas, and the sauce as well as whatever toppings you like. I did red onion and parsley, but would try tomatoes and more too.
