Chickpea Salad
- 1 c Chickpeas, boiled
- 0.5 celery stalk
- 2 tsp Tamari, or soy sauce
- 1 tsp Apple cider vinegar
- 1 tbsp Capers
- 1 tbsp caper brine
- 1 tbsp Dill, chopped
- 1 tbsp vegan mayo
- 1 tsp Mustard
- 0.25 nori sheet
- 2 tbsp Mustard
- 0.25 c Red onion, finely diced, seasoned with salt and vinegar
- 2 lettuce leaves
- 1 Tomato, sliced
- 1 Baguette, or bread of choice

Preparing the Chickpea Mash
1. Begin by mashing the chickpeas with a fork or processing them in a food processor by pulsing a few times.
2. Combine the chickpeas with all the other ingredients in a bowl and mash everything together with a fork or a potato masher until well combined.
Assembling the Sandwich
1. Spread some mustard on a baguette or bread of your choice.
2. Add lettuce and the “no-tuna” chickpea mash.
3. Top with sliced tomatoes and finely diced red onion that has been seasoned with salt and vinegar.
