- 1 green plantain
- 1 ripe plantain
- 1 yuca / cassava root
- 1 c refined coconut oil
- 1 Garlic clove, or more to taste
- 1 tsp adobo

Directions

Preparation of Plantains and Yuca
1. Peel and chop the plantains and yuca into 1 inch pieces.
2. In a frying pan, add the oil and heat up on medium/high heat.
3. Once the oil is hot, fry the plantains and yuca until golden brown on the outside and soft on the inside.
Mashing and Seasoning
1. In a mortar and pestle, add the garlic.
2. Mash the garlic with a bit of olive oil, add the plantains and yuca a little at a time while mashing together with the garlic and oil.
3. Season with adobo and add additional oil as needed.
Final Steps
1. After everything is mashed, create small balls with your hands.
2. Enjoy with your favorite dipping sauce like mayo-ketchup, or aioli.
3. Can also be served with broth or soup.
