Ingredients

Salsa Verde
- 1 jalapeño
- 0.5 yellow onion
- 4 tomatillos
- Lime juice, from 1 lime
- 4 cloves Garlic
- 0.5 bunch cilantro
- salt
- pepper
Carne Asada
- 12 oz skirt steak
- 1 tsp coriander
- 1 tsp oregano
- 1 tsp cumin
- 1 Orange, juiced
- 4 cloves Garlic, crushed
- black pepper
- 3 tbsp soy sauce
Quick Pickled Onions
- 1 red onion
- 0.75 c white distilled vinegar
- 0.25 c water
- 2 tbsp sugar
- 2 tsp sea salt
Fried Corn Tortillas
- 4 corn tortillas
- salt
- oil

Directions

Salsa Verde
1. Heat just a small amount of oil in pan over high heat.
2. Once oil is smoking, add onion, garlic, and tomatillos.
3. Char on all sides.
4. Once onion, garlic, and tomatillos are properly charred, add a half cup of water and cover.
5. Let steam for a few minutes, then uncover and reduce liquid for another minute.
6. Add charred ingredients to a blender with juice of a lime, and cilantro.
7. Blend until desired consistency.
8. Season to taste with salt and pepper.
Carne Asada
1. To a mixing bowl add skirt steak and all above ingredients.
2. Marinate for at least an hour, preferably overnight.
3. Before searing, pat steak dry with paper towels.
4. Get a pan with 1 tbsp neutral oil smoking.
5. Sear 2-3 minutes per side.
6. Let rest, slice into 1.5 cm cubes.
Quick Pickled Onions
1. Slice onions perpendicular to the root into rounds.
2. Set in a glass or metal container.
3. In a pot, mix vinegar of choice, water, sugar, and salt.
4. Heat over medium until simmering and homogenous.
5. Pour over onions.
Fried Corn Tortillas
1. Add at least 1 cm of oil to a pan.
2. Once oil is 350ºF, fry tortillas in batches for about 2 min per side.
3. Drain on paper towel or a wire rack and salt immediately after frying.
4. ** If you do not have a thermometer, dip a wooden spoon or chopstick into the oil. If it starts to bubble, oil is at the right temp for frying.
