Main Ingredients
- 1 lb Italian sausage
- 1 Onion, chopped
- 2 stalks Celery, chopped
- 2 Carrots, chopped
- 1 tsp Salt
- 0.5 tsp Pepper
- 1 tsp Italian seasonings
- 6 oz Tomato paste
- 0.5 c Dry white wine
- 0.5 c Flour
- 56 oz Chicken stock
- 1 package fresh Tortellini
- 2 c Half and Half or Cream
- 1 handful Spinach
- Parmesan

1. In a large stockpot set over medium-high, cook the sausage using a spoon to break the sausage up into small pieces.
2. When sausage is mostly browned, add onion, celery and carrot, sauté for 5 minutes or until the vegetables are soft.
3. Add the garlic, spices, and tomato paste; sauté until fragrant, stirring occasionally to prevent it from burning.
4. Add wine and stir to combine. Let simmer to cook out the alcohol.
5. Stir the flour into the sausage and cook for 1 minute. This will slightly thicken the soup, but will look very dry at this point.
6. Gradually add in the chicken broth while stirring everything together. Bring to a low boil, then reduce the heat and simmer on low for 15 minutes.
7. Add the cream, and when it is simmering add in the tortellini and the spinach. Cook until the tortellini is al dente (2- 3 min or whatever your package says).
8. Spoon into bowls and top with parmesan cheese and parsley.
