- 4 bacon slices
- 6 Scallions, sliced
- 3 Garlic cloves, chopped
- 4 tbsp Flour
- 1.5 c half and half
- 1.5 tsp seasoned salt
- 1 tsp Black pepper
- 0.25 tsp crushed red pepper flakes
- 2 10-ounce packages frozen spinach
- 0.5 c Parmesan
- Kosher salt
- 1 lb short cut pasta

Cooking the bacon and preparing the sauce
1. Cook bacon in a large skillet until crispy.
2. Add scallions and garlic and cook for a minute or two.
3. Stir in the flour and cook for 20 seconds or so.
4. Slowly stir in the half and half.
5. Season with seasoned salt, black pepper and crushed red pepper flakes.
6. Cook over low until thickened.
Preparing the spinach and cheese
1. Squeeze the spinach as much as possible.
2. Add to the sauce along with the parmesan and stir until combined.
Cooking the pasta and combining everything
1. Cook pasta according to package until al dente.
2. Reserve 1 cup of the pasta cooking liquid.
3. Drain and add the pasta to the sauce.
4. Stir everything until well combined, adding as much of the reserved liquid as needed to create a silky sauce.
5. Serve with more parmesan and crushed red pepper flakes.
6. Enjoy!
