Shrimp Pasta
- 1 lb Large shrimp, peeled, deveined and tail off
- 1 tbsp Olive oil
- 2 tbsp cajun seasoning
- 8 oz Pasta, I use penne
- 2 tbsp Butter
- 0.5 cup diced tomato
- 1.5 cup Heavy cream
- 0.5 cup grated parmesan cheese
- 2 Garlic cloves
- 1 diced shallot

Steps for Cooking Penne and Shrimp
1. Cook the penne to al dente in a pot with salted water.
2. While the pasta is cooking, coat your shrimp with 1 tbsp of the Cajun seasoning and cook in a skillet over medium heat with the 1 tbsp of oil. Cook for 1 1/2 minute on each side, then remove from heat.
3. In the same skillet, melt the butter and add your garlic and shallots and sauté for 3 minutes. Add your tomatoes and continue to sauté for 2 minutes.
4. Add your heavy whipping cream and cheese and remaining Cajun seasoning. Stir very well and bring to a simmer.
5. Lastly, add your penne and shrimp to the sauce and cook for 2 more minutes before serving. Top with more cheese because cheese is awesome.
