Ingredients

Crust
- 1 Springform Pan
- 1 Cooking spray
- Butter, 2.5 sticks
- 10 tbsp Sugar
- 3 sleeves graham crackers
Filling
- 4 8 oz. blocks Cream cheese, Room Temperature
- 1 c Sugar
- 4 Large eggs, Room Temperature
- 1 tbsp Vanilla extract
- 0.75 c Sour cream, Room Temperature
- 2 tbsp All purpose flour
- 0.25 tsp Kosher salt
Strawberry Glaze
- 0.5 c water
- 0.75 c Sugar
- 1 tsp Corn starch
- 1 tbsp Strawberry Syrup
- 1 tbsp Light corn syrup
- 1 red food coloring, Drop
- 0.5 Lemon, juiced

Directions

Preparation of Pan and Oven
1. Preheat your oven to 325°, and grease the sides of 10” springform pan with cooking spray.
2. Place a parchment paper on the bottom of the pan.
Preparing the Crust
1. Mix the crust ingredients and add it to the pan.
2. Set it aside.
Preparing the Filling
1. Now add the cream cheese and let it mix for a couple of minutes.
2. Then add the sugar, eggs, vanilla extract, salt and flour to the mixer and keep scraping the sides now and then so it all comes together and there are no major lumps. I am not too fussy about super smooth batter. You never even notice it once baked or during consumption.
Baking the Cheesecake
1. Finally pour the filling to the crust.
2. Cover the outside of the pan carefully with foil before adding it to the water bath.
3. Now bake it for an hour and a half.
4. Let it completely cool down before placing it in the fridge overnight.
Serving the Cheesecake
1. When it’s time to serve, place 14-16 fresh strawberries to the cake and lightly brush with the glaze.
2. This glaze is gelatin free and you can freeze any leftover for later use.
