- 1 Shortcrust pastry (pâte brisée)
- 4 Tomatoes
- 2 tbsp Dijon mustard
- 1 tbsp Olive oil
- Salt, 2 pinches
- Provence Herbs

1. Pre-heat your oven to 180 degrees.
2. Butter your mould to get a crunchier crust, or leave your pie crust on the parchment paper if you don't mind – both works! Lay the dough in your mold, press it to the mold and use a fork to poke a handful of holes in the crust.
3. Spread 1-2 tbsp of Dijon mustard on your crust. The whole surface of the dough should be covered by a thin layer.
4. Cut 4 juicy tomatoes in thin slices (about 3 mm). Place them on them all around, and sprinkle over herbes de provence, salt and olive oil.
5. Bake at 180 degrees for 20 minutes.
