- 5 Yukon gold potatoes
- 8 slices of bacon
- 1 sweet white onion
- 2 c Heavy cream
- 1 tbsp Italian seasoning
- 1 tbsp ground mustard
- 2 tsp Paprika
- 1 tsp Kosher salt
- 2 tsp Black pepper
- 0.5 tsp Nutmeg
- 2 c mixed cheeses
- 2 tbsp Butter

Directions

Preparation
1. Heat your oven to 400 F.
2. Use a mandolin to slice potatoes thin (on level 2).
3. Place potatoes into cold water for 30 min.
4. While your potatoes are soaking, prepare your bacon and onions.
5. Dice your bacon and onions.
Cooking Bacon and Onions
1. In a large cast iron skillet, cook bacon over medium heat until brown.
2. Once bacon is finished, remove from the skillet.
3. Keeping the bacon grease in the skillet, add diced onions and cook until translucent.
4. Place bacon and onions to the side.
Preparing Cream Mixture
1. Next, mix cream, cheese and seasonings in a large bowl.
2. Drain, potatoes and pat dry.
3. Add potatoes to the cream mixture and gently fold everything together.
Layering and Baking
1. Butter your skillet and layer potatoes in. There will be reserved cream mixture, save that for the top.
2. Once potatoes are in the skillet, pour remaining mixture to the top of the potatoes.
3. Add more cheese to the top and lightly tent cover with foil.
4. Bake potatoes for 35-40 min until bubbling and tender.
5. Remove the foil for the last 10 min, to brown the top.
Serving
1. Remove from the oven and let sit for 5-7 min before serving.
2. Enjoy!
