- 10 jalapenos
- 8 oz Cream cheese, room temperature
- 1 c Cheddar cheese, shredded
- 0.5 c Sour cream
- 2 tbsp BBQ spices
- 2 lbs ground sausage
- 1.5 lbs Bacon, regular cut
- 1 c BBQ sauce

Directions

Preparation
1. Preheat your oven to 350° F.
2. Start by coring and deseeding your jalapenos. Cut off the end and use the end of a spoon to remove the inner seeds and ribs.
3. In a medium-sized bowl, combine cream cheese, sour cream, cheddar cheese, and some barbecue spices.
4. Mix together well using a spoon.
5. Place your cream cheese mixture into a Ziploc bag.
6. Pipe each jalapeno with your filling mixture.
7. Next, take a scoop of sausage and flatten it out in your hand and wrap each stuffed jalapeno end to end with the sausage. They should end up looking like mini footballs.
8. Next, take each stuffed wrapped jalapeno and place some bacon on each end and then wrap all the way around the center. It's important to cover as much of the sausage that you can with the bacon. So this portion will probably take about 2 and 1/2 pieces of bacon.
9. Once all of your jalapenos have been wrapped and stuffed, place a piece of parchment paper on the bottom of your baking sheet and then place a wire rack on top of that and place each stuffed jalapeno on top.
10. Season each jalapeno with some more of the barbecue seasoning.
Baking
1. Bake your jalapenos for 25 minutes at 350°F.
2. Once you notice the bacon starting to cook fully, turn up your oven to 400° F.
3. Once you notice your bacon is completely finished cooking, pull them out and add your barbecue glaze with your basting brush.
4. Bake for another 5 minutes for the barbecue glaze to set.
5. Let your armadillo eggs cool for at least 5 minutes before cutting into them. The inside will be extremely hot!
Serving
1. You can serve these with an avocado ranch or regular ranch dressing, whatever you like.
2. Cut them diagonally and enjoy!
