- 8 oz Spaghetti, or pasta of choice
- 3 Tomatoes, medium-sized, ripe
- 1 clove Garlic, grated or very finely chopped
- 2 tbsp Extra virgin olive oil
- 1 tsp coarse sea salt flakes
- 0.5 tsp freshly cracked pepper
- 0.5 cup Basil leaves
- 0.25 cup grated cheese

To make this simple tomato pasta
1. Halve and grate tomatoes using the largest holes on a grater while using the skin as protection.
2. Cook pasta in salted water until al dente.
3. Heat olive oil on medium-low heat and add the grated tomatoes and garlic.
4. Toss the cooked pasta with the tomato sauce.
5. Add (plant-based) cheese and fresh herbs to elevate the flavor.
6. Season with cracked pepper and coarse sea salt.
7. Enjoy!
