Ingredients

"Main Ingredients"
- 3 eggplants
- 0.5 lb minced pork
- 2 tbsp Corn starch
- Green onion, diced
"Sauce"
- 6 clove Garlic, minced
- 1 tbsp Ginger, minced
- 3 small red peppers
- 1 tsp Salt
- 1 tbsp Sugar
- 4 tbsp Soy sauce
- 1 tbsp black vinegar
- 1 c water

Directions

Preparing the Eggplant
1. Cut eggplants into larger pieces.
2. Then coat with corn starch - fully coat the eggplant. This will prevent the eggplants from absorbing the vegetable oil when cooking.
Preparing the Sauce
1. Mix all the ingredients in a side bowl and set aside.
Cooking the Eggplant
1. Add oil and cook the eggplant on a pan over medium heat for around 5 minutes, set aside.
Cooking the Pork
1. Add vegetable oil to the pan over medium high heat and cook the minced pork for a few minutes.
2. Then add in the eggplant.
Finalizing the Dish
1. Add the sauce into the pan and cook with a lid for around 3 minutes.
2. After 3 minutes, remove the lid and cook on high heat until the sauce thickens.
3. Top with green onion.
4. Enjoy with rice.
