- 1 c Parsley, stemmed
- 1 tbsp Dried oregano
- 1 tbsp Garlic, minced
- 1 tsp Salt
- 0.5 tsp Black pepper
- 0.5 c extra-virgin olive oil
- 2 tbsp coconut vinegar
- 1 tbsp Lime juice
- 0.5 tsp Red pepper flakes
- 2 lbs skirt steak
- 1 tsp Salt
- 0.5 tsp Black pepper

Chimichurri Directions
1. Add all the ingredients into a food processor and pulse a few times.
2. Store in the refrigerator for 1 minute before using.
3. Can store in the refrigerator for 5 days.
Steak Directions
1. Rub both sides with salt and pepper.
2. Can be cooked on the grill on medium heat, or on a cast iron skillet with a tad of oil.
3. Cook the steak for 3-5 minutes on each side. A bit longer for a well done steak.
4. Slice into strips if desired, and add the chimichurri on top.
5. Enjoy with tostones, and a side salad if desired.
