Ingredients

- 450 g Spanish chorizo
- 3 clove Garlic, chopped
- 1 medium onion
- 1 Carrot, chopped
- 2 Celery stalks, chopped
- 3 Tbs Parsley, washed, disinfected and chopped
- 1 cup Chickpeas, cooked in unsalted water
- 3 Tbs Sherry wine vinegar
- 4 cup Vegetable stock
- 2 Bay leaves
- pinch ground clove
- 2 Tbs Paprika
- 1 Tbs Wheat flour

Directions

1. In a pot, sear the chorizo slices. Let them brown and render their fat; remove from the pot and add the onion, garlic, carrot, celery and parsley in the chorizo fat; cook until softened.
2. Add the chickpeas and vinegar. Pour the stock with bay leaves, spices and the chorizo. Bring to a boil and lower the heat. Simmer for 20 minutes or until it thickens.
3. Serve in bowls garnished with parsley.
4. Share and enjoy.
Tip:
1. Add some cayenne pepper to spice up your stew.
