Ingredients

Spam
- 1 can spam
- 1 tbsp Soy sauce
- 1 tbsp Mirin
- 1 tbsp Oyster sauce
- 1 tbsp Brown sugar
Rice
- 2 cups short/medium grain rice
- nori
- furikake
- 1 tbsp spicy mayo
- 1 tbsp Brown sugar
- 1 tbsp Scallions
Tamago (only for 2 musubis)
- 3 Eggs
- 3 tbsp dashi
- 1 tsp Sugar
- 1 tsp Mirin
- 1 tsp Soy sauce

Directions

Preparation of Spam and Glaze
1. Cut spam into 8 pieces and make the glaze using equal parts soy sauce, mirin, oyster sauce, and brown sugar.
2. Heat up the pan on medium high to fry the spam and coat in the glaze on medium low until it gets sticky. Set aside.
Rice Cooking and Seasoning
1. Cook rice and season with salt, sugar, and rice vinegar to your preferred taste.
Tamago Preparation
1. Whisk together 3 eggs with dashi, sugar, mirin, and soy sauce.
2. Pour the mixture through a sieve and transfer to a measuring cup (for easy pours).
3. Heat up a pan on medium low and lightly oil the pan.
4. Pour a 1/3 of the egg mixture on the pan and start rolling the egg onto one side once the egg looks set.
5. Add more of the egg mixture and tilt the pan so it combines with the other cooked egg. Be sure to lift up the cooked egg so the egg liquid can go underneath. Repeat this process until all the egg mixture is finished (You might have to make more depending if you want more egg).
6. Roll egg on a bamboo rolling mat to keep its shape.
Assembling the Dish
1. Assemble with seaweed, rice, furikake, spam, egg, more rice, and wrap it all together. Cut into 4 pieces.
2. Optional: Drizzle with spicy mayo, sprinkle brown sugar, torch the brown sugar, and garnish with scallions.
