Main Ingredients
- 3 Chicken breasts, cut into chunks
- 2 clove Garlic, minced
- 0.5 Lemon, sliced
- 1 Red onion, small, sliced
- 0.5 bunch Cilantro, cut into 2-inch pieces, discard any woody ends
Chicken Marinade
- 1.5 tbsp Soy sauce
- 0.5 tsp Dark soy sauce
- 2 tsp Black pepper
- 0.5 tsp Salt
- 2 tsp Corn starch
- 1 tsp Oil
- 1 tsp hot chili pepper
- 1 tbsp Sugar
- 2 tsp Soy sauce

1. Add chicken chunks and all the chicken marinade ingredients to a bowl. Let the chicken marinate for at least 15 minutes.
2. Heat about 1.5 tablespoons of oil in a non-stick skillet over medium heat. Once the skillet is hot, add the marinated chicken. Cook for 4-5 minutes until golden brown.
3. Remove the chicken from the skillet and set aside. Leave the remaining oil in the skillet.
4. Add minced garlic, sliced onion, and sliced lemon to the same skillet and sauté for 1-2 minutes until the onion slices start to become slightly soft.
5. Add chopped chili pepper (if using), 1 tablespoon of sugar, and 2 teaspoons of soy sauce. Stir fry for 1 minute.
6. Return the cooked chicken back into the skillet and stir-fry everything for 1-2 minutes until everything is evenly coated in the sauce.
7. Remove from heat and serve Soy Lemon Chicken over a bowl of white rice.
8. Enjoy!
