Ingredients

Salad
- 1 head iceberg lettuce
- 1 can Black beans, rinsed
- 1 Red bell pepper, sliced
- 1 Red onion, small, sliced
- 10 Cherry tomatoes, quartered
- 3 corn on the cobs
- 3 Chicken breast, chopped
- 3 tbsp Avocado oil
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Chili powder
- 0.5 tsp pink Himalayan salt
- 0.5 tsp coarse black pepper
- 2 Avocados, sliced
- 3 Lime wedges
- 3 stem Cilantro, use full cilantro leaves washed or chopped
Dressing
- 1 c vegan mayonnaise
- 3 tbsp water
- 2 tbsp Lime juice
- 3 tsp Apple cider vinegar
- 2 tsp Chili powder
- 1 tsp Ground cumin
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 0.5 tsp dried dill
- 0.25 tsp Paprika
- 0.25 tsp Cayenne

Directions

For the chicken preparation
1. Pour oil into a medium frying pan and turn on low.
2. Cut chicken breasts lengthwise and then cut into strips.
3. Place chicken into the frying pan and add garlic powder, onion powder, chili powder, pink Himalayan salt, and coarse black pepper.
4. Cook on medium until browned.
For the salad preparation
1. Clean and cut iceberg lettuce, red bell pepper, red onion, cherry tomatoes, corn, and add to a large salad bowl.
2. Add black beans and cooked chicken.
3. Top with sliced avocado, cilantro, and lime wedges.
For the dressing
1. In a jar with a lid, mix dressing ingredients and shake until well combined.
2. Pour on top of the salad.
