Chicken Skin
- 0.5 lb chicken skin
- 0.5 c water
- 0.25 tsp Kosher salt
- 0.25 tsp White pepper
- 0.25 tsp Garlic powder
- 0.25 tsp Paprika
- 0.25 tsp Cayenne pepper

Preparing the Chicken Skin
1. Place chicken skin face down in a cold nonstick pan along with any excess chicken fat.
2. Turn the heat to medium and cook until you hear sizzling, about 1-2 minutes.
3. Add water to the pan and bring to a high simmer.
4. Reduce the heat back to medium and continue cooking until the water has evaporated, leaving the rendered fat to crisp up the skin, flipping as needed until a deep golden brown.
5. Remove and drain on a paper towel.
Seasoning the Chicken Skin
1. In a small bowl, combine salt, pepper, garlic powder, paprika, and cayenne pepper.
2. Sprinkle on chicken skin while hot.
Alternative Uses for Chicken Skin and Rendered Fat
1. Alternatively, cut chicken skin into bite size pieces and use on top of stir fries, noodles, soups for extra crunch.
2. Strain the rendered chicken fat into a glass or airtight container to use for potatoes or vegetables.
