- 14 tbsp unsalted cold butter
- 1 c light brown sugar, or coconut sugar
- 1 Egg
- 1 tsp Vanilla extract
- 1 c sourdough discard
- 2 c Flour, regular or gluten free
- 1 tsp Baking soda
- pinch sea salt
- 1.5 c chopped chocolate bars

1. First, preheat oven to 350 degrees Fahrenheit.
2. Line a baking pan with parchment paper.
Mixing Ingredients
1. In the bowl of a stand mixer, add cold butter and light brown sugar.
2. Mix on high until combined, about 2 to 3 minutes.
3. Mix until no clumps of butter remain.
4. Then, add in egg and vanilla.
5. Mix to combine.
6. Add in sourdough discard, flour, baking soda and sea salt.
7. Mix until a thick dough is formed.
8. Fold in most of the chocolate chunks.
9. Reserve a few for the tops of the cookies.
1. Use an ice cream scooper to scoop out balls of dough onto lined pan.
2. Press a chocolate chunk in the middle of each dough ball.
3. Space at least 3 inches apart on pan.
4. Bake for 8 to 10 minutes.
5. Cookies will look very soft and gooey.
6. Allow cookies to fully cool on pan before trying to remove.
7. They are soft!
