- 2 Carrots, grated
- 1 c Red cabbage, thinly shaved
- 3.5 oz silken tofu
- 0.5 c edamame
- 1 Avocado, sliced or make an avocado rose as seen in the video
- 1 spring onion
- 0.5 c Cilantro leaves
- 0.5 tbsp Black sesame seeds, toasted
- 0.5 tbsp White sesame seeds
- 1 tsp Sesame oil
Dressing
- 2 tbsp tamari or soy sauce
- 1 tbsp Sesame oil
- 0.25 c sweet chili sauce
- 1.5 inch Ginger, grated

Directions

Prepare the soba noodles
1. Prepare the soba noodles according to package instructions.
2. Rinse with cold water and massage with 1 teaspoon of sesame oil so that they don't stick together.
Prepare the dressing
1. Combine all the ingredients for the dressing.
Assemble the salad
1. Use soba noodles as a base and top with all your veggies, herbs, and seeds.
