Ingredients

- 6 large sweet bell peppers
- 2 ripe plantains
- 1 lb Ground beef
- 0.5 c Onions, chopped
- 0.5 c peppers
- 0.25 c Cilantro, chopped
- 3 clove Garlic, minced
- 2 tsp Adobo
- 1 tsp Sazón
- 1 tbsp Sofrito
- 0.5 c Tomato sauce, if desired

Directions

Preparing the peppers
1. Rinse the peppers and cut the top part off.
2. Do not throw away the top, we will chop that part for the meat.
3. Remove the seeds and rinse inside and out.
4. In a large pot, add water and bring to a boil.
5. Boil the peppers for 2 minutes.
Preparing the plantains
1. While the peppers cook, peel the plantains, chop into small pieces, and bake at 350ºF for 30-35 min, or air fry for 10-15 min.
2. Cook until the plantains change color to a brighter yellow and soft inside.
Preparing the "picadillo"
1. Now let’s make the “picadillo” as we call it in Puerto Rico.
2. Cook the beef in a pan on high heat.
3. Add the meat, onions, chopped peppers, cilantro, garlic and seasonings.
4. Allow everything to cook on medium/high heat while stirring occasionally.
5. Once the meat has browned and vegetables are soft, add the tomato sauce if desired.
6. Then add the cooked plantains and mix all together.
Final steps
1. Stuff the peppers with the ground beef mixture and bake for 10-15 minutes.
2. Enjoy with a side salad.
