- 1 large tomato
- pinch Salt
- 2 tbsp homemade pesto
- 0.5 c Oil, for frying
- 4 tbsp garlic confit
- 4 Eggs
- 2 tbsp pomegranate seeds

Directions

Marinating the Chicken
1. In a bowl add the hickory smoked marinade to cubed chicken.
2. Leave it in the fridge for an hour.
Frying the Chicken and Eggs
1. Now add 2 tbsp of oil in the pan and fry the chicken until crispy.
2. Then fry the eggs.
3. Set it aside.
Grilling the Tomatoes
1. Now grill sliced tomatoes that had been sprinkled with some salt.
Assembling the Sandwich
1. Time to assemble.
2. Spread the garlic confit on the sliced bread.
3. Then add the pesto and then chicken goes next.
4. Finally place the eggs on top and for some color and crunch, add a few pomegranate seeds.
5. Enjoy this beauty for lunch or brunch!
