Ingredients

- 2 15-ounce cans Chickpeas, drained
- 1 Shallot, chopped
- 6 clove Garlic
- 1 c Cilantro leaves
- 1 c Parsley leaves
- 1 tsp Salt
- 0.5 tsp Cumin
- 0.5 tsp Coriander
- 0.5 tsp Black pepper
- 0.25 tsp Aleppo pepper
- 0.5 c all-purpose flour
- 1 tsp Baking powder
- 7 Large eggs
- 1.5 c Panko bread crumbs
- Vegetable oil, for deep-frying
- hummus
- tzatziki
- sliced cucumber
- Tomato, for serving
- Lemon, for serving

Directions

Preparing the Falafel Mixture
1. Dry the chickpeas really well with a kitchen towel and then place in a food processor.
2. Add the shallot, garlic, cilantro, parsley, salt, cumin, coriander, black pepper and Aleppo pepper.
3. Pulse until chopped through and it begins to come together.
4. Transfer to a bowl and add the flour and baking powder and stir until well-combined.
5. Chill for 30 minutes.
Boiling the Eggs
1. Bring a medium pot of water to a boil and then carefully lower 6 of the eggs into the boiling water.
2. Cook for exactly 7 minutes and then transfer to an ice bath.
3. Allow the eggs to cool before peeling.
Assembling the Falafel Scotch Eggs
1. Divide the falafel mixture evenly into 6 portions.
2. Working with one at a time, flatten it out and then add a hard boiled egg in the center.
3. Wrap the falafel mixture around and roll out into a smooth sphere.
Coating the Falafel Scotch Eggs
1. Beat the remaining egg in a bowl and add the panko to a separate bowl.
2. Dip each falafel egg into the beaten egg and then into the bread crumbs until evenly coated.
3. Place onto a baking sheet.
4. Once all are shaped and coated, chill until ready to use.
Frying the Falafel Scotch Eggs
1. Fill a pot with about 3 inches of oil and bring up to 360F°.
2. Once hot, carefully lower one or two falafel scotch eggs and fry until golden brown and crispy.
3. Transfer to a wire rack and season with salt.
4. Continue frying the rest.
Serving the Falafel Scotch Eggs
1. Serve with hummus, tzatziki, cucumber, tomato and lemon.
2. Enjoy!
