For the Fried Olives:
- 6 oz Pitted Olives
- 4 oz Smoked Goat Cheese
- 0.333 cup All purpose flour
- 2 large Eggs, beaten
- 1 cup Panko breadcrumbs
- 2 cups Frying Oil
For the Garlic Aioli:
- 0.5 cup Mayonnaise
- 3 Garlic cloves, minced
- 1 Lemon, juiced
- 0.5 tsp Salt
- 0.5 tsp Black pepper

For the Fried Olives:
1. Stuff the pitted olives with the goat cheese.
2. Line up three (3) separate bowls together. In the first bowl, add the flour. In the second bowl, add the beaten eggs. In the third bowl, add the breadcrumbs.
3. Batter the olives in the flour, then the beaten eggs, then the breadcrumbs.
4. Heat up the frying oil to 400F.
5. Fry the battered olives in the hot oil for 1-3 minutes, moving them around with a slotted spoon to help them fry evenly on all sides.
6. Use a slotted spoon to remove the fried olives and place on a paper towel lined plate to drain excess oils. (Optional: Season with flaky salt while hot.)
For the Garlic Aioli:
1. Whisk all ingredients together generously. Season with salt and black pepper to taste. Enjoy with the warm fried olives!
