- 4 pork chops, smoked or thick cut (unsmoked)
- 1 box wild rice
- 4 slices provolone cheese
- 4 slices Gouda cheese
- 4 slices Bacon, cooked and chopped
- 2 tbsp Avocado oil
- 2 tbsp Cali Love
- 2 tbsp Onion powder
- 1 tbsp Italian seasoning
- 1 tbsp Kosher salt
Peach Rosemary Compote
- 2 peaches, peeled and diced
- 1 tbsp Brown sugar
- 1 Lemon, juiced
- 2 tbsp Butter
- 2 sprigs Rosemary, chopped

Directions

For the pork chops
1. Season your pork chops with the spices listed.
2. Drizzle some avocado oil on the spiced pork chops.
3. Heat your grill pan to very high heat, but not smoking.
4. Sear your pork chops on both sides to create grill marks.
5. While your pork chops sear, make your rice and slice up your cheese and cooked bacon.
6. Mix your filling together in a bowl.
7. Once you are done searing your pork chops, fill them with your rice mixture.
8. In an oven heated to 375 F, bake your stuffed pork chops for 20 minutes until the cheese is melted. If your chops are not pre-smoked, cook them 10-12 minutes longer or until they are at your desired doneness.
For the Peach Rosemary compote
1. While your chops are in the oven, mix together all of the ingredients for the Peach Rosemary compote.
2. Add all the ingredients into a saucepan over medium heat.
3. Cook until bubbly and sugars have dissolved and the sauce has thickened.
4. Add your compote to your Stuffed pork chops and Enjoy!
