- 1.5 pounds Ground pork
- 1.5 pounds pork belly
- 1 c Garlic, minced
- 0.75 c Brown sugar
- 1 tbsp Salt
- 1 tsp Black pepper
- 2 tbsp Paprika
- 1 tbsp Oyster sauce
- 1.5 tbsp Soy sauce
- 1 tbsp vinegar
- 1 tbsp Sriracha

Directions

Preparation of Ingredients
1. Using a food processor, mince the garlic and set aside.
2. Cut the pork belly into small cubes and place in a bowl.
Marinating the Meat
1. In the same bowl add the ground pork, garlic, brown sugar, salt, black pepper, paprika, oyster sauce, soy sauce, vinegar, and sriracha.
2. Mix until everything is well mixed and incorporated.
3. Place a plastic cover on the bowl and let marinate overnight.
Making the Sausage Links
1. The next day you can make them into sausage links.
2. Cut small rectangles of parchment paper.
3. Place a spoonful of longganisa in the middle of the parchment paper.
4. Fold it over lengthwise, then with pressure, slide it towards you to make a sausage link.
5. Roll the link over the remainder of the parchment.
6. Repeat and store in a ziplock bag and store in the fridge or freezer.
7. If you are in a rush, make sausage patties instead.
Cooking the Sausages
1. Fry the links or patties on medium low heat with a little oil until browned on both sides.
2. You can also cook them in the air fryer for 5-7 minutes at 375* F.
Serving Suggestions
1. Best served warm with a side of garlic rice and fried eggs.
