Ingredients

- 1 lb Boneless skinless chicken thighs
- 1 tsp Kosher salt, for Chicken
- 1 tsp Black pepper, for Chicken
- 1 Tbs Cooking oil, for Chicken
- 4 Large eggs
- 2 Tbs Unsalted butter, for Eggs
- 1 Tbs Cooking oil, for Fried Rice
- 1 Tbs Unsalted butter, for Fried Rice
- 1 Medium White Onion
- 3 clove Garlic, Minced
- 2 cup Frozen Peas & Carrots
- 4 stem Green onion, Diced
- 2 cup White rice, (Cooked then refrigerated)
- 0.33333333333333331 cup Low sodium soy sauce
- 2 tsp Sesame oil
- Black pepper, to taste
- Kosher salt, to taste

Directions

1. Cook rice and refrigerate for at least 4-24 hours prior to cooking dish.
2. Clean and pat dry chicken thighs. Season chicken with salt and black pepper. In a skillet on medium heat, add in cooking oil, then add in chicken. Cook chicken on both sides for about 4-5 minutes or until done. Set chicken aside.
3. For eggs, In a skillet on medium-low heat add in butter. Once butter is melted, add in eggs and scramble. Do not season eggs. Set scrambled eggs aside.
4. In a skillet on medium heat, add in cooking oil and butter. Once butter is melted, add in diced onions and cook for 1 minute, then add in minced garlic, peas & carrots, green onion and cook for about 2 minutes.
5. Add in cooked scrambled eggs and cooked rice. Rice should be cooked prior to starting recipe and refrigerated for at least 4 hours-24 hours.
6. Add in soy sauce & sesame oil. Dice cooked chicken and add into dish. Mix all ingredients together, season with salt & pepper to taste, and cook for about 2-3 minutes.
