Pork Belly
- 2 lb pork belly
- 1 pork skin
- 1 head garlic
- 0.5 Red onion
- 3 Bay leaves
- 1 tbsp peppercorns
- 2 tbsp Salt
- Fish sauce
- 1 Red onion
- 3 thai chilis
- 5 clove Garlic
- 4 tbsp mayo
- 2 tbsp liquid seasoning Maggi
- Lemon, squeeze of
- Salt
- Pepper
- Butter
- Egg, optional
- Onions

Preparation of Pork Belly
1. Boil pork belly and pork skin with garlic, onion, bay leaves, peppercorns, and salt for 35 minutes.
2. Let pork belly cool down and pat dry.
3. Poke holes in the skin with a fork.
4. Marinate all sides with fish sauce.
5. Let pork belly dry in fridge overnight or for 4 hours.
Air Frying the Pork Belly
1. Air fry pork belly at 360 degrees for 35 minutes or until your desired crispness.
Preparation of Sisig Mixture
1. Cut pork belly into small pieces.
2. Dice onion.
3. Mince garlic.
4. Cut Thai chilis.
5. Cut lemon.
6. Mix together all the ingredients in a bowl with mayo, Maggi, and lemon.
Cooking the Sisig
1. Melt butter on a cast iron pan.
2. Add in sisig mixture to the pan.
Garnishing the Sisig
1. Garnish with onion, chilis, an egg, and lemon on the side.
