- 2 slices Bacon, thick cut
- 3 patties breakfast sausage
- 4 slices Taylor Ham pork roll
- 1 c tater tots
- 0.5 Red onion, medium size, diced
- 1 Thai chili
- 1 c mayo
- 1 tbsp calamansi juice or lemon juice
- 0.5 tsp Black pepper
- 1 tsp Garlic powder
- 0.5 tbsp Butter
- 1 Egg
- 2 Scallions, thin rounds

Preparation of Ingredients
1. Dice onion and finely chop Thai chili.
2. Slice scallions into thin rounds.
3. Cut bacon, sausage, and pork roll into bite size pieces.
Preparation of Calamansi Aioli
1. In a bowl combine mayo, calamansi juice, black pepper, and garlic powder.
2. Mix until well combined.
Cooking the Breakfast Meat Mixture
1. In a pan, render the bacon.
2. Once almost crispy, add sausage and pork roll.
3. Cook for 1 minute then add Thai chili and half the red onion.
4. Cook until onion is slightly translucent.
Cooking Tater Tots
1. Cook tater tots in fryer or air fryer until crispy and lightly salt.
Combining Ingredients
1. In a bowl add tater tots, breakfast meat mixture, the other half of the red onion, and 2 tablespoons of the calamansi aioli.
2. Mix until well combined.
Final Cooking and Serving
1. Heat sizzle plate until it is smoking.
2. Once it reaches the desired temperature, place on top of wooden charger.
3. Working quickly, add butter to the plate and spread around.
4. Next add the sisig.
5. Using a spoon, create a hole in the middle and crack the egg into it.
6. Drizzle more aioli on top, and garnish with scallions.
7. Serve and enjoy.
