Ingredients

Pickled Red Onion
- 1 Red onion, sliced
- 0.75 c vinegar
- 0.25 c water
- 1 tsp Salt
- 2 tsp Sugar, or sweetener of choice
Shrimp Tacos
- 1 lb raw wild caught shrimp
- 1 tbsp Avocado oil
- 2 tsp chili seasoning
- soft corn tortillas

Directions

Preparation of Ingredients
1. Add all the ingredients into a medium pot.
2. Cook on medium heat for 5-10 minutes until the desired texture is achieved.
3. Defrost the shrimp in hot water if frozen.
4. Peel the shrimp completely.
5. Clean really well with running water.
6. Chop the shrimp in small pieces.
Cooking the Shrimp
1. In a frying pan, add the oil, shrimp and seasoning.
2. Mix well and cook on medium high heat for 2 to 6 minutes until shrimp are opaque.
Assembling the Tacos
1. Warm up the tortillas in a skillet until desired texture.
2. Stuff with the shrimp, onions and top with fresh cilantro, lime, hot sauce, avocado and any other desired toppings.
