Ingredients

For palestinian chicken
- 4 Chicken thighs
- 2 cup plain yogurt
- 0.5 cup Extra virgin olive oil
- 8 clove Garlic
- 1 tsp Sumac, ground
- 1 tsp Cumin
- 1 tsp Coriander
- 1 tsp Cinnamon
- 1 tsp Allspice
- 1 Small onion, grated
For tzatziki sauce
- 1 cup Greek yogurt
- 1 Cucumber, seeded
- 2 clove Garlic
- 1 Lemon, juiced
- 0.25 cup Dill, finely minced
- Sesame seeds
- Sesame oil, or grapeseed oil
Additional
- Kosher salt, to taste, for chicken and tzatziki
- Black pepper, to taste, for chicken and tzatziki

Directions

For palestinian chicken
1. Quantities below are for original serving size of four.

In a bowl, combine 2 cups of yogurt, ½ cup of extra virgin olive oil, 8 cloves of minced garlic, 1 tsp each of ground sumac, cumin, coriander, cinnamon, and allspice, 1 small onion grated, fresh ground pepper and kosher salt.
2. Whisk to combine. Add chicken thighs and mix thoroughly with your hands. Cover and place in the fridge to marinate for at least 2 hours.
For tahini
1. Heat a clean, dry cast iron or heavy duty skillet over medium high heat and add the sesame seeds. Stir frequently until they begin to turn golden brown and then stir constantly. Be careful, sesame seeds burn very easily.
2. Once they're toasted, let them cool a few minutes then add them to a food processor.
3. Start by adding 3 tablespoons of grapeseed or sesame oil. Process the mixture into a paste, scraping down the sides. Add more grapeseed oil until you reach desired consistency.
For tzatziki sauce
1. In a medium bowl, whisk together the yogurt, chopped cucumber, minced garlic, juice of one lemon, and dill. Season with salt and pepper. Chill.
Final preparation
1. Cook marinated chicken thighs using your favorite method. You can bake or grill them, or if you're looking for the real thing order a shawarma machine and cook for an hour and a half, until outer layer is cooked.
2. Cut chicken into chunks or strips.
3. Serve on a pita with your sauces and other desired accoutrements, then enjoy!
