Spicy Chicken Meatballs
- 1 lb ground chicken
- 0.25 c Almond flour
- 1 Egg, I used 3 tbsp Just Egg (egg replacement)
- 1 tsp Red chili flakes
- 3 tbsp Tamari
- 1 tbsp Ginger
- 1 tbsp Parsley
- 2 tsp Sesame oil
- 1 tsp pink Himalayan salt
- 1 tsp coarse black pepper
- 1 8oz package rice angel hair noodles
- 0.25 c gluten free soy sauce
- 2 tbsp Honey
- 1 tbsp Ginger
- 1 tbsp Mirin
- 1 tsp Sesame oil
- 3 full Scallions, white and green cut diagonal
- 1 tsp Garlic, minced
- 2 full Scallions, white and green cut diagonal
- 1 tbsp Sesame seeds, more or less to taste

Preparation of Meatballs and Noodles
1. Preheat your oven to 375 degrees.
2. Line a baking sheet with parchment paper and set aside.
3. In a medium mixing bowl combine ground chicken, almond flour, egg (or egg replacement), garlic, red chili flakes, tamari, ginger, parsley, sesame oil, pink Himalayan salt, and pepper.
4. Roll into 1 tablespoon meatballs and place on prepared baking sheet.
5. Bake for 15-20 minutes or until center is 165 degrees.
6. Prepare noodles by boiling a pot of water and cooking noodles according to the package.
7. Drain and set aside.
Sauce Preparation and Final Touches
1. In a large mixing bowl make sauce by combining gluten free soy sauce, honey, ginger, mirin, sesame oil, scallions, and garlic.
2. Whisk sauce together and add noodles and cooked meatballs.
3. Toss noodles and meatballs so everything is evenly coated in sauce.
4. Top with scallions and sesame seeds.
