- 1 lb Italian Sausage links
- 1 tbsp Olive oil
- 4 Red bell pepper, cut into thin slices
- 2 White onion, cut into thin slices
- 1 lb Baby potatoes, cut into 1" cubes
- 1 tsp Garlic powder
- 1 tsp Salt
- 0.5 tsp Black pepper
- 1 tsp Dried oregano
- 1 tbsp Red wine vinegar

1. Preheat oven to 400 degrees F (200 degrees C).
Cooking the Sausage
1. Heat olive oil in a large skillet over medium heat.
2. Add sausage links and cook until browned on all sides.
3. Remove sausage from skillet, slice and set aside.
Preparing the Vegetables and Potatoes
1. Add bell pepper slices and onion slices to a 9×13 inch baking dish.
2. Add the cubed potatoes.
3. Top with garlic powder, salt, pepper, oregano, red wine vinegar and olive oil.
4. Add sliced sausage.
1. Bake for 45 minutes, or until potatoes are tender and sausage is cooked through.
