Chicken Thighs
- 5 Chicken thighs
- 4 tbsp Olive oil, divided in half
- 2 tsp Salt
- 2 tsp Pepper
- 2 tsp Garlic powder
- 2 tsp lemon pepper
- 2 tsp Onion powder
- 2 tsp Smoked paprika
- 2 tsp Italian seasoning
- 1 Shallot, diced
- 3 clove Garlic, minced
- 1 c White wine
- 1 c Heavy cream
- 0.25 c Chicken Broth
- 0.25 c Parmesan cheese
- Lime, juiced half
- 1 tbsp Honey
- 2 clove Garlic, smashed

1. Preheat the oven to 350.
2. In a small bowl mix together the seasonings.
3. Coat the chicken thighs in olive oil then season.
4. In a cast iron skillet add olive oil then sear the chicken skin side down for 5 to 7 minutes.
5. If thighs are large flip over and sear for an additional 3-5 minutes if smaller skip this step.
Sautéing the shallots and garlic
1. Remove the chicken and leave about a teaspoon of the grease and sauté the shallots for 3 minutes.
2. Then add in the minced garlic and cook until fragrant.
Preparing the sauce
1. Deglaze with the white wine and let it reduce for about 5 minutes.
2. Then pour in the chicken broth.
3. Bring to a simmer then grate in Parmesan cheese.
4. Once the cheese is melted add in the fresh squeezed lemon juice then honey.
5. Taste and add more honey if sauce is too bitter.
6. Let this simmer for a few minutes.
7. At this point you can strain the sauce and add back to the skillet or keep the shallots in there if you choose.
Final cooking
1. Add the chicken back to the skillet along with a few lemon slices and smashed cloves of garlic.
2. Cook in the oven for about 10 minutes.
3. Then brush chicken with melted butter and cook for an additional 15 to 20 minutes.
Serving suggestion
1. This paired perfectly with mashed potatoes and broccolini.
