Ingredients

Tofu and Seasonings
- 1 tofu, firm block
- 0.333 c Cornstarch
- 0.25 tsp Salt
- 0.25 tsp Black pepper
- 0.25 tsp Paprika, smoked
- 2 c Vegetable oil, for frying
- 1 tbsp Garlic, finely minced
- 4 red chilis
- 1 Scallion, white part
Salt & Pepper Seasonings
- 0.5 tsp Salt
- 0.5 tsp cayenne pepper powder
- 0.25 tsp Sichuan peppercorn powder
- 0.25 tsp white pepper powder

- chili oil
- Scallions

Directions

Preparing the Tofu
1. Drain the water from the package and pat the tofu dry with paper towels or a clean kitchen towel.
2. Cut the tofu into 1-inch cubes.
Preparing the Coating
1. Combine cornstarch, salt, black pepper, and paprika.
2. Mix well.
3. Add the tofu cubes to the starch mixture and coat evenly.
Frying the Tofu
1. Heat oil in a wok until hot. Test with a chopstick; it's ready when the end bubbles steadily.
2. Carefully add the tofu and stir to prevent sticking.
3. Fry for 5-6 minutes until golden brown.
4. Transfer to a plate lined with a paper towel.
Preparing the Sauce
1. Discard excess oil, leaving about 1 tbsp.
2. Heat on medium-low and add garlic, red chilis, and the white parts of scallion.
3. Stir for 30 seconds until fragrant.
4. Add the fried tofu along with the dry seasonings, stirring to coat.
5. Once all the seasonings are evenly distributed, turn off the heat.
Serving the Dish
1. Serve the tofu on top of rice and garnish with chili oil and scallions.
2. Enjoy!
