- Cilantro, a handful
- thai basil
- Parsley, a handful
- 1 Shallot
- 1 tbsp Capers, heaping
- 1 tbsp caper brine
- 1 tbsp Fish sauce
- 2 Limes, juiced and zested
- 1 Orange, juiced and zested
- 4 tbsp Extra virgin olive oil
- 1 lb sushi grade salmon
- red chili

1. For the Thai basil, remove the leaves from the stems.
2. Finely chop along with the parsley and cilantro.
3. Finely dice a shallot and mince capers.
4. Add the herbs, shallots, and capers to a bowl with the rest of the ingredients (except fish).
5. Thinly slice fish and set on a plate then lay your vinaigrette on top.
6. Top off each piece of fish with a thin slice of a red chili and serve.
