- 6 oz Gruyere cheese
- 8 slice Pullman bread (or good quality white bread)
- 8 oz smoked salmon
- 2 tsp Chives, sliced thin
- 6 Tbs Unsalted butter, softened

1. Using a peeler or mandolin cut the gruyere very thin.
2. Lay out the bread and cover with gruyere, then cover with smoked salmon in a single layer, sprinkle with sliced chives then cover with a slice of bread cheese side down. Repeat to make 4 sandwiches.
3. Cut the crusts from the sandwiches.
4. Using a pastry brush, cover top and bottom with softened butter.
5. Place a non stick pan over medium heat, when hot add one croque and saute till golden brown.
6. Turn and repeat on the second side.
7. Repeat with remaining sandwiches, slice into quarters and serve.
