- 1 tsp Black pepper
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Smoked paprika
- 1 tsp Oregano
- 0.25 tsp Ground Cayenne Pepper
- 2 Tbs Avocado oil, for seasoning fish
- 2 Tbs Avocado oil, for cooking fish
Fish Taco Sauce
- 0.5 cup Sour cream
- 0.33333333333333331 cup Mayonnaise
- 2 Tbs Lime juice
- 2 Tbs Fresh cilantro, minced
- 0.5 tsp Kosher salt
- 0.5 tsp Black pepper
- 0.5 tsp Garlic powder
- 0.5 tsp Cumin
- 0.5 tsp Smoked paprika
- 4 Tortillas
- Queso Fresco
- Red cabbage
- Carrots

Quantities below are for 4 servings
1. Pat dry room temperature rockfish filets. Lightly drizzle each filet with oil on both sides. Combine the following spices: salt, black pepper, garlic powder, onion powder, smoked paprika, oregano, and cayenne pepper; Then, sprinkle spice mix over each filet on both sides. Gently pat the spices into the filets.
2. In a skillet on medium-high heat, add in 2 tablespoons of oil. Once oil is hot, add in rockfish filets. Cook for about 2-3 minutes each side or until the fish is fully cooked and gets a blackened crust on each side.
3. For fish taco sauce, in a bowl, combine and whisk sour cream, mayonnaise, lime juice, cilantro, salt, black pepper, garlic powder, cumin, and smoked paprika.
4. Assemble your tacos as desired. Enjoy
