Yukon Gold Potatoes
- 5 lbs Yukon gold potatoes
- 0.25 c Olive oil
- 1 Lemon, juiced
- 2 Rosemary Sprigs
- 4 cloves Garlic, minced
- Salt, to taste
- Pepper, to taste
- Garlic salt, to taste
- 4 TBS Butter
- 0.25 c Chicken stock, or any animal fat like bacon fat. Optional.

1. Preheat oven to 400º.
2. Cut potatoes into cubes and spread out in a baking dish.
3. Cover fully with olive oil and lemon juice, you may need to eyeball amounts. You want all of the potatoes to have an oily/lemon glaze. Optional: add chicken broth or animal fat here. Toss so all the potatoes are covered.
4. Put garlic through mincer and distribute throughout the baking dish.
5. Sprinkle with salt, pepper, garlic salt, and rosemary leaves. Distribute evenly over the potatoes. Toss and sprinkle again.
6. Thinly cut butter and distribute through each 1/4 of the dish. Each section should have a tab or two of butter.
7. Pop into the oven for 45 minutes, or until they pierce easily with a fork, and are golden brown.
1. The ingredient measurements are not exact. I mostly "eyeball" the amounts of olive oil and seasonings. You want to make sure the potatoes have a nice coating of liquid, with a little liquid pooled at the bottom of the pan. Cover everything in seasoning.
