Ingredients

What You'll Need
- 4 c White rice, 1 day old or refrigerated uncovered for 2 hours
- 4 Shallots, 2 diced 2 sliced into thin rings
- 3 Garlic cloves, sliced thin
- 4 Green onions, whites chopped, greens sliced on bias
- 1 lb sweet sausage
- 2 tbsp msg
- 1 tbsp Sugar
- 0.333 c Soy sauce
- 1 White pepper
- Salt, to taste
- 6 dried chilies
- 1 tbsp Red chili flakes
- 3 Eggs, beaten
- 0.5 c Frozen peas
- 4 Basil leaves, Slivered

Directions

How to Cook it!
1. Prep your vegetables and eggs as directed in the ingredient list
2. If your sausage is raw, cook it to package instructions then pan fry it until deeply browned and a bit crispy. Add the red chili flakes to the sausage at this time.
3. Fry the shallot rings starting in room temperature oil. Bring up to 350 degrees F and fry until light brown. Remove and let drain on paper towel. It will continue to brown while it cools.
4. In a wok ,or large non stick pan on high heat, add a few tablespoons of neutral cooking oil. Once hot, add in your diced shallots, chopped green onion, and garlic and fry for 2 minutes.
5. Push the vegetables to one half of the pan and add the eggs. Scramble to a "soft scramble" and add the rice.
6. Break up as many lumps as possible and leave alone for a couple minutes to develop a little crust. Add peas, white pepper, sugar, msg, and soy sauce during this time. Stir fry aggressively for 1-2 minutes.
7. Add the sausage and the green tops of the green onion and stir fry again for a minute or so.
8. Plate it up however you want, top with fried shallots, and enjoy the best fried rice of your life!
