- 1 Whole Branzino
- 1 Orange, sliced into half moons
- 1 Shallot, sliced thick
- 1 Lemon, thinly sliced
- Fresh oregano
- 8 Garlic cloves, lightly smashed
- Sumac, optional
- 2 c Olive oil
- Fresh thyme
- Fresh rosemary, for garnish
- 1 c Cherry tomatoes

1. season the outside of the fish liberally with salt, pepper, and ground sumac if you can find it.
2. Snip off little side fins and filet the fish from the bottom if needed
3. Season the inside with salt and pepper and stuff with oranges, 4 garlic cloves, and a bunch of fresh oregano
4. bake at 425 for 12 minutes then broil for 3
5. Add olive oil, tomatoes, garlic, shallots, salt, thyme and two slices of lemon.
6. Turn the heat to medium low and let cook for about 15-20 minutes or until everything is softened and the oil smells infused with the flavors
7. drizzle the infused oil over the fish and add the tomatoes, garlic, shallots, and lemons on top and enjoy!
