For the vegetables
- 1 cup Chickpeas, cooked
- 1 beetroot
- 1 Sweet potato, diced
- 1 Tbs Olive oil
- 1 tsp Ground cumin
- 1 tsp Ground cinnamon
- 1 tsp Paprika
- 1 tsp Ground ginger
For the bowl
- 3 Tbs Olive oil
- 3 Tbs Lime juice
- 1 tsp Honey
- pinch salt and fresh black pepper
- 1 cup Quinoa, cooked
- 1 cup Cucumber, halved
- 1 cup Cherry tomatoes, halved

For the vegetables
1. Pre-heat your oven to 200ºC/400ºF
2. In baking tray, spread the beetroot, chickpeas, and sweet potato and spray them with olive oil and sprinkle with spices. Bake for 25 minutes or until the vegetables are soft and browned.
For the bowl
1. In a jar, mix the olive oil, lime juice, honey, lime zest, salt and fresh black pepper. Shake vigorously to emulsify.
2. In a bowl, add the quinoa, roasted vegetables, chickpeas, cucumber and tomatoes and integrate. Split this mix in different serving bowls and splash with vinaigrette.
3. Share and enjoy.
1. Roasted chickpeas by themselves are a fantastic snack, filled with protein, minerals and fiber.
