Ingredients

Chicken and Marinade
- 8 chicken drumsticks
- 8 Chicken thighs
- 1.5 c Buttermilk
- 0.25 c Chinese five spice
- 0.25 c ginger
- 3 tbsp Salt
- Flour, enough to make the marinade wet and almost pasty
Spice Blend
- 1 c duck fat
- 1 c dried chilies
- 0.5 c szechuan peppercorns
- 8 dried mushrooms
- 0.333 c Sugar
- 3 tbsp Salt
- 2 tbsp msg
Dredge
- 1 c Flour
- 0.5 c Cornstarch
- 0.5 c Potato starch

Directions

Preparing the Chicken
1. dry brine the chicken in salt for about an hour then combine all marinade ingredients into a bowl and mix well. add the chicken and coat thoroughly. Let marinate at least an hour and up to overnight
2. combine the flour and starches in a large mixing bowl and coat the chicken THOROUGHLY. you don't want bare spots or the crispy dredge could fall off when eating
3. drop the chicken into 330 degree oil and let fry for 7-10 minutes until golden brown and cooked through.
4. remove and let rest for 15-20 minutes then fry once again at 400 for about 30 seconds
5. heat your duck fat or vegetable oil to about 250. then pour into the spice blend.
6. immediately brush it all over the chicken while both are still hot and serve with a side of ranch!
