- 1.5 c gluten free flour
- 0.5 c White sugar
- 0.5 c Brown sugar, packed
- 1.5 tsp Baking soda
- 0.5 tsp Baking powder
- 0.5 tsp Salt
- 2 Eggs
- 0.75 c Almond milk
- 0.333 c Vegetable oil
- 2 tbsp pure almond extract
- 2 tbsp Poppy seeds

1. Preheat the oven to 350 degrees.
2. Prepare your muffin tin with 12 paper muffin holders and set aside.
Combining Dry Ingredients
1. In a stand mixer using the paddle attachment combine all of the dry ingredients on low.
2. Mix until the mixture is free of large clumps.
Adding Wet Ingredients
1. Add eggs and mix until combined well.
2. Add the almond milk, mix well, and then add the oil.
3. Mix in the pure almond extract and poppy seeds.
4. Mix until the batter forms, but do not over mix.
Scooping and Baking
1. Scoop the batter into the prepared muffin tins.
2. Bake the muffins for 20-25 minutes or until lightly golden brown and the tops are set.
1. Remove muffins from the oven, and set aside to cool.
