- 4 cubed steaks
- salt and pepper
- 0.5 tsp Paprika
- 0.5 tsp granulated garlic
- 0.5 tsp granulated onion
- 0.75 tsp Old Bay
- 3 Large eggs
- 2 tbsp Milk
- 1.5 c all-purpose flour
- 0.5 c Cornstarch
- Vegetable oil, for frying
- 1 tbsp Chives, for garnish
- 0.5 lb breakfast sausage
- 0.5 Yellow onion, finely chopped
- 0.25 c all-purpose flour
- 1.5 c whole milk
- salt and pepper

For the steak bites
1. Cut cubed steaks into small pieces and season with salt and pepper.
2. In a small bowl, whisk together the eggs and milk.
3. In a separate small bowl, combine the flour, cornstarch and seasonings.
4. Dredge steak bites by passing through flour then egg and back into flour.
5. Heat 2 inches of oil in a large skillet or pot.
6. Fry the steak in batches until golden brown and crispy.
7. Transfer with a slotted spoon onto a baking sheet lined with paper towels.
8. Garnish with chives.
For the gravy
1. Brown the sausage in a pot.
2. Add onion and cook until softened.
3. Add flour and cook for 30 seconds or so.
4. Stir in milk and cook until thickened.
5. Season with salt and pepper.
6. Enjoy!
